Your finger is like a tiny electricity sponge! Under the screen is a grid of invisible wires carrying a small electric charge. When your finger touches the screen, it soaks up a tiny bit of electricity at that spot. The tablet notices where the electricity changed and knows exactly where you touched! Some screens use cameras or pressure sensors instead, but most phones and tablets use your finger's electric-sponge superpower.
